Serves 3 or 4 people. We make a double batch of this for 5 of us and have a few leftover.
Ingredients
200g plain flour
pinch of salt
1.5 - 2 tbsp caster sugar
1tsp cinnamon
1 egg (large, or whatever)
300ml milk
1tbsp baking powder
Method
Whack all except the baking powder in a blender and mix for a bit, then add the baking powder and mix it in briefly.
Fry on a medium low heat in small jar lid size pancakes, flipping once the tops bubble.
